WORKSHOP This hands-on workshop is an invitation to slow down and step into the thoughtful, seasonal world of Japanese bento, inspired by everyday home cooking in Japan and rooted in the rhythms of spring.
SEASONAL FOCUS A central ingredient of the workshop is wild garlic, a brief and abundant woodland plant that mirrors the Japanese appreciation for ingredients that appear only for a short time and are valued because of it.
EXPERIENCE You will learn how to prepare at least five different vegetarian dishes for a traditional bento, including a vegetarian wild garlic gyoza, with each dish chosen for its flavour, texture, and balance within the meal.
APPROACH We will explore how wild garlic, cherry blossoms, and other seasonal ingredients are handled with simplicity and care, alongside core Japanese cooking techniques and the principles of balance, colour, and harmony in bento making.
TAKE HOME At the end of the workshop, you will assemble your own bento to take with you, including a wooden bento box, cooking chopsticks, and a rice shamoji.
