We are fortunate to have a miso and fermentation expert from Oxford, Naoko from Koji Works (@japanese_ferments) travel to us to teach us about miso. Learn about the history of miso, its importance to Japanese culture and other aspects of Japanese history, such as the military and literature.
Learn to distinguish good quality miso, how this fermented soy benefits your health, especially your gut, the function of koji, and taste 3-4 different types of miso.
There will also be a miso-making demonstration, with the option to purchase your own miso-making kit.
We also demonstrate different ways of cooking with miso, and not just miso soup, though Naoko will teach you to make the tastiest miso soup too!
